Honeycomb (Nigella's Hokie Pokie)

I am starting this blog with a sweet recipe I learned only last week while watching Nigella Lawson's express dvd.

Honeycomb (or as Nigella lovingly calls it 'my hokie pokie')

These are it's ingredients...

4 tblsp of Golden Syrup
100g of Caster Sugar
1 1/2 tps of Bicarb-soda

Place the sugar and golden syrup in a saucepan and place over high heat
Do not stir.
Once the sugar has dissolved/melted in the melting golden syrup whirl them together by holding the saucepan's handle and just whirling around so as to mix them in properly.
When that is done turn off the heat and add the Bicard-Soda all at once and then whisk together and then pour onto a tray that has been pre-prepared with a sheet of baking paper. Leave to set for about fifteen minutes.
When it has set break it up into the pieces you want (it might be slightly sticky in the middle that's alright if you want it that way)
If you want to you can dip them in chocolate. (Recommended as it tastes sooo good)

But when you have eaten your fill (and if there is any left) they will need to put in an air tight container otherwise they will be a melted piece of goop by morning.

Notes:
Once the bicard-soda has been added you need to really work quickly because it begins setting almost instantly.

I add 5 tblsp of golden syrup instead of 4, to get rid of the Bicard-soda taste that remains in the mouth slightly once the honeycomb has been devoured.
